Italian Chicken Cutlets

Crispy, golden, and packed with flavor - these Italian chicken cutlets are a weeknight hero and a total family favorite. Perfect on their own, over a salad, or layered in a sandwich.

Ingredients:
2 boneless, skinless chicken breasts
1 cup Italian-style breadcrumbs
1/2 cup grated Parmesan cheese
2 eggs
1/2 cup all-purpose flour
Salt & black pepper
1 tsp Italian dried herbs
1/2 tsp crushed red pepper flakes (adjust to taste)
Olive oil (for frying)
Lemon wedges (for serving)
Optional: fresh parsley for garnish
Instructions:
Prep the Chicken
Slice each chicken breast in half lengthwise to create thin cutlets. Pound to even thickness (about 1/4 inch).
Set Up a Breading Station
Bowl 1: Flour – season with salt and black pepper.
Bowl 2: Beaten eggs
Bowl 3: Breadcrumbs mixed with Parmesan, Italian dried herbs and crushed red pepper flakes.
Bread the Cutlets
Dredge each cutlet in flour (shake off excess), dip in egg, then press into the breadcrumb-Parmesan mixture until well coated.
Fry Until Golden
Heat a generous layer of olive oil in a skillet over medium heat. Fry the cutlets 3–4 minutes per side until golden and cooked through. Don’t overcrowd the pan- work in batches if needed.
Rest & Serve
Transfer to cooking rack over sheet tray or a paper towel–lined plate to remove excess oil. Serve hot with lemon wedges and a sprinkle of fresh parsley if desired.
